Roasted Macadamia Nut Encrusted Seared Eye Fillet

Serves 1

200g eye fillet
50g roasted macadamia nuts
50mls macadamia nut oil
½ teaspoon ground pepperleaf
1 teaspoon roasted wattleseed
1 cup basic jus

METHOD:
Place macadamia nuts in a pre-heated 180 degree oven and roast until golden brown (approx 15 minutes). Once removed from oven, drop temperature to 150 degrees. Place the nuts in mortar and pestle with the native mountain pepper and roughly crush (not too fine). Set aside.

In a hot frying pan, drizzle the macadamia oil and sear the eye fillet until golden brown. Remove from pan and place on rack. Encrust the fillet with the crushed macadamia nuts, and sit in warm oven to rest.

Make a basic jus or gravy. Add the roasted wattle seed to infuse the jus for approx 5 minutes.

Serve the eye fillet with seasoned vegetables, and coat the plate with the jus or gravy.
